There are two sound models. A design-and-build team carries the design, procurement and construction interfaces under one appointment. Separate consultants and contractors can work well too; however, the owner must then decide who resolves gaps between drawings, selections and site conditions.
Design-and-build: one point of accountability
Your concept, menu, seating target and busiest service period determine the renovation scope. Write down how guests will enter, queue, order and collect; how staff will prepare drinks or food; where deliveries arrive; and what needs daily cleaning, storage and maintenance access.
